A group of fishermen hand harvest Chocolate Clams in the shallow sand bottoms off the Pacific Coast of Baja California and in the Sea of Cortez. When it is low tide, fishermen simply pick the chocolate clams up off the beach with a special clam rake. Until recently import regulations made these highly sought-after clams almost impossible to find outside of Baja. The fishermen have worked with the US Government and Atenea en el Mar to bring “Baja’s Seafood Candy” to eager chefs in the US.
