The Nautilus Oyster is a version of the Pacific Oyster (Crassostrea gigas), also known by its common names Japanese oyster, Miagi oyster, immigrant oyster, and giant Pacific oyster.  The Nautilus Oysters are farmed in San Quintín, a coastal town on the west coast of Baja California that is well known for its seafood farming. The farm itself is located at the Bahia San Quintin lagoon complex where proximity to intertidal water, and the variety of micro algae in it, gives the Nautilus Oysters their own special clean-tasting, full-bodied flavor. The Nautilus are medium to large oysters (3.5- 4”) with semi-firm texture. A harder shell results in fewer flakes, while a deep cup houses a supple liquor and ocean-fresh brininess that lingers through a sea grass finish. Some have described the Nautilus as having all the great attributes of a Kusshi or Kumomoto, only twice as large. This oyster is perfect for a half-shell presentation, whether chilled, grilled or broiled. The Pacific Oyster itself has been introduced in North America, Australia, Europe, and New Zealand. Crassostrea gigas was named by a Swedish naturalist, Carl Peter Thunberg in 1795. It originated from Japan, where it has been cultured for hundreds of years. It is now the most widely farmed and commercially important oyster in the world, as it is very easy to grow, environmentally tolerant and is easily spread from one area to another. The most significant introductions were to the Pacific Coast of the United States in the 1920s and to France in 1966. In most places, the Pacific oyster was introduced to replace the native oyster stocks which were seriously dwindling due to overfishing or disease.
