Found along the Pacific coast from Southern California to Peru, including the Revillagigedo Islands off the southern tip of Baja California, Pacific Snappers weigh between 4 and 6 pounds, but can grow up to 35 pounds. Also known as “Lutjanus peru”, Pacific Snappers are so popular and rich in taste that they are often marketed whole with lengths ranging between 20 and 39 inches. The Pacific Snapper is considered of excellent quality with sweet and flaky meat and is commonly served without removing its edible skin. Pacific Snappers are generally pan-fried, broiled, baked, or steamed.
