Baja Halibut (Cortez Halibut or California Flounder)

The "Baja Halibut" group are actually Flounders that are present in Baja California and include both the California Flounder (Paralichthys californicus, pictured to the right) and the Cortez Halibut (Parlichthys aestuarius). The California flounder is a large-toothed, native to the waters of the Pacific Coast of North America from the Quillayute River in Washington to Magdalena Bay in Baja California. The Cortez halibut is similar to the California flounder but with a broader body and more fin rays. Typically Baja Halibuts weighs 6 to 50 pounds (3 to 23 kg).

Ortega Cruz runs a co-op of artisan fishermen located along the Pacific coast of Baja. Working together, these fishermen catch fish using traditional hand lines and low-impact hand-drawn nets from small, open panga boats that are beach-launched daily. His co-op consists of 30-40 pangas and 2-3 fishermen per each boat.
