Yellowtail Hiramasa / Amberjack (Farmed)

The buttery texture and bright, mild flavor of this yellowtail is similar to Hawaiian kampachi (Seriola rivoliana), and provides a slightly less fatty alternative to Japanese hamachi (Seriola quniqueradita). The original stock currently being farmed by Baja Seas was bred from fingerlings produced at Hubbs-Sea World Research Institute – renowned for developing methods of raising high-value marine fin fish species and sustainable ocean practices.

Saltbox is all about local flavor, from the farm fresh ingredients that go into the menu, to the people who come through our door. This is where comfort food is allowed to stretch and cocktail culture gets a twist. If the name gastro-lounge sounds like fun, it is. Dining and drinking should work in harmony, and depending on your mood, Saltbox lets you pull up a barstool, a table, a couch or a poolside cabana. Mostly, Saltbox is about the people. And we have some extremely good people.
