Weighing from 4-25 pounds, Mon Chong have brownish black skin with translucent, pink flesh. Mon Chong, also known as "Pomfret", have large flakes with semi firm, mild and sweet meat. Mon Chong are generally grilled, seared, baked, broiled, sautéed, or used as sushi.
